Welsh Cakes

What's The Big Idea?
Traditional tea-time snack. We prefer to think of them as "perfect half-time snack"!

NB: You do need a baking stone or traditional iron griddle to cook them.

Shopping List Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you! 8oz plain flour ½ teaspoon baking powder ¼ teaspoon mixed spice 4oz butter 3oz caster sugar 2oz currants 1 egg Pinch of salt A little milk

What To Do Sift the flour, baking powder and mixed spice together into a mixing bowl. Cut up the butter and rub it into the flour. Add the sugar, currants and the egg and mix to form a dough; add a little milk if needed. Roll the dough out on a lightly floured surface to a thickness of about 6-7mm. Use a pastry cutter to cut out rounds. Grease a bakestone or a heavy iron griddle with a little butter. Place directly onto the heat and allow it to heat up. Cook the Welsh cakes on the griddle for about 3 minutes on each side, turning once. They should be light-mid brown in colour once cooked. Remove from the griddle/bakestone and sprinkle with caster sugar.
