American Jambalaya

What's the big idea?
Absolutely without a doubt one of our favourite all-time recipes. Cannot resist going back to the pot to nibble, even after two helpings!
It may not be truly authentic to the New Orleans style Jambalaya, but it's still delicious!

Shopping List
Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will not only deliver it for you, they'll take £10 off the bill!

  • 5oz chorizo sausage, sliced
  • 1 large onion, peeled and sliced
  • 2 sticks of celery, sliced
  • 8oz chicken or turkey meat, cubed
  • 1 green pepper, deseeded and chopped
  • 1 red pepper, deseeded and chopped
  • 2 cloves of garlic, minced
  • 1 red chilli, finely chopped
  • 2 tablespoons of vegetable oil
  • 2 teaspoons of paprika
  • 1½ pints chicken stock
  • 1 teaspoon mixed herbs
  • 2 bay leaves
  • 8oz large or tiger prawns
  • 11oz long grain rice
  • 1 bunch spring onions, chopped

What To Do
BulletpointHeat the vegetable oil in a large wok. Stir in the paprika, then add the chicken.
BulletpointWhen the chicken is browned on all sides, add the chorizo, onion, peppers, celery, garlic and chilli. Fry for 5 minutes.
BulletpointAdd 8oz large or tiger prawns, and 11oz long grain rice. Fry for 2 minutes, stirring continuously.
BulletpointPour in the chicken stock. Bring to the boil, and reduce heat to simmer.
BulletpointAdd 1 teaspoon mixed herbs and 2 bay leaeves. Cover and simmer for 10 minutes, or until the rice is almost cooked.
BulletpointLeave to stand for 5-10 minutes to allow more liquid to absorb into the rice.
BulletpointServe at once, garnished with sliced spring onions.
