Nigerian Fish Stew (Be Eja Tutu)

What's the big idea?
This fish dish traditionally uses the local Obokun fish, but if this isn't available where you live, any firm-fleshed white fish will do.
The dish uses a ludicrous quantity of chillies - 2oz per person - so I have tamed it down somewhat, but feel free to experiment and add more if you wish.
Serve with boiled rice or couscous.

Shopping List
Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you!

  • 4 fish fillets
  • 2 tablespoons lemon juice
  • 1 tin chopped tomatoes
  • 4 fresh red chillies
  • 3 tablespoons tomato puree
  • 1 large onion
  • 4 tablespoons peanut - or other vegetable - oil
  • ½ teaspoon dried thyme
  • ½ teaspoon curry powder
  • Freshly ground black pepper and salt to taste
What To Do
BulletpointRinse the fish fillets. Place in a non-metallic bowl and rub in lemon juice, salt, pepper, thyme and curry.
BulletpointCover and refrigerate for 1 hour to marinate.
BulletpointIn a blender, blend the tomatoes, onions and chillies.
BulletpointHeat the oil in a large frying pan - a wok is better - and add the tomato/onion/chilli mixture.
BulletpointCook for 20 minutes until the sauce has reduced somewhat. Stir in the tomato puree.
BulletpointAdd the fish and its marinade, season and cook for 20 minutes, stirring only gently.
