Visnjak - Montenegrin Cherry Cake

What's The Big Idea?
Cakes containing fruit are very popular across the former Yugoslavian region. Cherries are traditional, but dried fruit soaked in rum or brandy can also be used.

Shopping List
Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you!

  • 3oz plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 10 large eggs, separated
  • 4oz plus 2 tablespoons sugar
  • Zest of 1 lemon, finely grated
  • 1lb sour or sweet cherries
  • Icing sugar for dusting
What To Do
BulletpointPreheat oven to 350F / 175C.
BulletpointGrease a 9 inch X 13 inch (or similar sized) baking tray, and dust the bottom with flour.
BulletpointSift together flour, baking powder and salt. Beat egg yolks in a bowl with an electric mixer on high speed until thick and lemon coloured.
BulletpointReduce the speed and gradually add 4oz sugar.
BulletpointIncrease speed to high and beat for about 5 more minutes, or until yolks are very pale yellow and they form soft peaks. Beat in the lemon zest.
BulletpointStir in the flour, salt and baking powder mix.
BulletpointIn separate clean bowl, beat the egg whites with pinch of salt until they form soft peaks.
BulletpointGradually beat in the remaining 2 tablespoons sugar, then beat whites until they are creamy and form shiny peaks.
BulletpointStir ¼ of the egg whites into the cake mixture to lighten it, then fold in remaining whites a little at a time.
BulletpointPour the mixture into the prepared baking tray. Spread the fruit evenly over the top.
BulletpointBake for 25 - 30 minutes in the middle of the oven, until the cake is golden brown and a toothpick inserted into the center comes out clean.
BulletpointAllow to cool completely on a wire rack.
BulletpointDust with icing sugar, cut into suitable portions, and serve.
