Hungarian Chicken Paprikash

What's The Big Idea?
Hearty chicken stew flavoured with two of Hungary's favourite ingredients - sour cream and paprika. Traditionally served with dumplings - these can either be cooked separately, or added to the pan late in the cooking process.

Shopping List Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you! 2 medium onions, chopped 4 tablespoons vegetable oil or lard 3 tablespoons paprika Plenty of freshly ground black pepper 1 teaspoon salt Your choice of whole chicken portions - legs, thighs, breasts ½ pint sour cream 1 tablespoon cornflour

What To Do Heat the oil or lard in a large flame-proof casserole or wok. Fry the onion until just browned. Add the paprika and chicken, and fry for 5-10 minutes until the chicken is browned all over. Add 12 fl oz water, season well with salt and black pepper, cover and simmer slowly until tender. Remove the chicken from the pan and keep warm. Add the sour cream to the pan and mix well. Mix the cornflour with a little cold water, and stir into the contents of the pan. Serve the sauce poured over the chicken, with dumplings and fresh green vegetables.
