English Beef in Ale Casserole

What's the big idea?
Warming one-pot meal - great for those miserable English winter months!

Shopping List Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you! 2 tablespoons vegetable oil 1 large onion, peeled and chopped 1lb stewing beef, cubed 1lb carrots, peeled and sliced 1lb baby potatoes, halved 400ml English ale ("dark beer")* Salt and fresh black pepper 300ml beef stock 1 tablespoon tomato puree 5oz frozen peas 2 tablespoons cornflour

What To Do Heat the oil in a large flameproof casserole and fry the beef for 5 minutes. Add the onion, carrots and potatoes. Fry for a further 3 minutes. Stir in the tomato puree and pour in the ale and stock. Bring to the boil, reduce the heat, cover and simmer for 1¼ hours. Season with salt and black pepper. Add the peas and cook for a further 10 minutes. Mix the cornflour with a little cold water to form a thin paste, then stir into the casserole until the juices thicken. * There are many good ales readily available in supermarkets or online.
