Danish Beef Stew with Dumplings (Stuvet Oksekød)

Classic stew and dumplings - warming comfort food!
Serves 6

Shopping List Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you! 2lb (1kg) stewing beef 2 tablespoons vinegar 6 tablespoons (Danish) butter 2 medium onions (chopped) 4oz plain flour ¾ pint beef stock 1 teaspoon salt ½ teaspoon of pepper ¾ teaspoon baking powder 1 tablespoon chopped fresh parsley ¼ teaspoon dried marjoram

What To Do Place the stewing beef in a bowl. Sprinkle with the vinegar and set aside. Meanwhile, melt half the butter in a heavy frying pan or wok. Add the onions and fry until golden. Stir in 1oz flour. Gradually stir in the stock and bring slowly to the boil. Add the meat, half the salt and the pepper. Stir well, cover and simmer at a low heat for 2 hours. Sift together the baking powder, ½ teaspoon salt and 3oz of flour in a bowl. Add the parsley and marjoram to the bowl and mix well. Blend in the remaining butter with your fingers, and mix in 2 tablespoons cold water. Form the dough into small balls and drop into the stew. Cover and continue to cook over a low heat for a further 30-45 minutes.
