Danish Grilled Salmon with Warm Salad

What's the big idea?
Traditional and straightforward dish. Serve with boiled potatoes.

Shopping List Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you! 1 courgette, into thin slices ½ butternut squash, into 1cm cubes 1 fennel bulb, cut into thin strips 2 tablespoons (Danish) butter 1 large salmon fillet, suitable for 4 peaople Grated rind of one lemon, plus one whole lemon Salt and black pepper ½lb fresh spinach leaves

What To Do Melt the butter in a large frying pan or wok. Fry the squash and fennel for about 10 minutes, until almost cooked. Add the courgettes. Fry until all the vegetables are cooked. Meanwhile, place the salmon on a baking tray or grill pan, skin side up. Grill for 5 minutes. Turn the salmon over, sprinkle with the grated rind of one lemon, and plenty of salt and black pepper. Grill for a further five minutes or until cooked through. Meanwhile, place the spinach leaves in a large serving bowl. Spoon the warm vegetables on top, and garnish with lemon wedges. Serve with the salmon and boiled potatoes.
