Æblekage (Danish Apple Pudding)

What's the big idea?
Very tasty and unusual pudding - well worth a try. Makes a good pud for a posh dinner party too (you can add a little apple schnapps to the apple mixture if you want to!)!
However, does contain nuts and raw egg white, so allergy sufferers please take note!

Shopping List
Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you!

  • 2 slices of bread, made into breadcrumbs
  • 4 tablespoons white sugar
  • 4 tablespoons hazlenuts
  • 1½lbs cooking apples
  • 1 lemon
  • 3 tablespoons of honey
  • 1 egg white
  • 3 tablespoons of caster sugar
What To Do
BulletpointPlace the breadcrumbs in a non-stick pan over a low heat with the sugar. Cook gently - stirring constantly - for about 5 minutes, until golden brown.
BulletpointTransfer to a bowl and set aside to cool.
BulletpointMeanwhile, chop and toast the hazlenuts. Set aside to cool.
BulletpointPeel, core and slice the apples.
BulletpointGrate the rind of the lemon, and extract the juice.
BulletpointMix together the apples, lemon rind and juice, and honey in a pan.
BulletpointCook over a low heat until the apples are soft (stewed).
BulletpointMeanwhile, beat together the egg white and the caster sugar until stiff.
BulletpointWhen the apples have cooled, fold the egg white mixture into the apples.
BulletpointSpoon half the apple mixture into the bottom of 4 individual serving bowls. Top with half the breadcrumbs.
BulletpointRepeat the layers, finishing with breadcrumbs. Sprinkle with chopped nuts.
BulletpointChill until ready to serve.
