Brazilian Chicken in Red Wine - Frango ao Vinho

What's the big idea?
When the Portuguese first colonised the area now known as Brazil, they brought with them a love of red wine. Although much of the area isn't as well suited to wine production as nearby Argentina and Chile, they persevered. Red wine - although not as popular as beer - is still enjoyed by many Brazilians, and as this recipe shows, they use it to cook with as well.
Serve with plain boiled rice and vegetables of your choice.

Shopping List Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you! 4 rashers bacon 2 tablespoons olive oil 4 boneless chicken breasts Plain flour 15-20 shallots, peeled and halved 7 fl oz dry red wine 4 fl oz chicken stock 1 teaspoon dried thyme Salt and black pepper to taste

What To Do Grill the bacon until crispy - set aside. Mix together some plain flour, salt and black pepper, and coat the chicken breasts with this. Heat the oil in a large frying pan. Add the shallots and fry until golden. Add the chicken breasts and fry until browned all over. Add the wine, stock and thyme. Bring to the boil, reduce the heat and simmer for 15-20 minutes. Serve with the crispy bacon crumbled on top of the chicken breasts.
