In common with many other Angolan recipes, this uses palm oil, and quite a lot of it. Concerns are being raised by many environmental groups about the way in which large areas of natural forest are being destroyed in many parts of the world in order to produce palm oil. Additionally, it is not always easy to obtain in some countries, or may be labelled incorrectly, and the amount of oil used is quite high compared to western cooking styles, so we have adapted this recipe to "westernise" it, using less oil and oil from alternative sources.
Serve with plain boiled rice.
