Angolan Chicken & Bean Stew - Feijoada

What's the big idea?
It's interesting to compare this dish with the Brazilian recipe for Feijoada. In essence it's the same dish, which is believed to have been introduced to Brazil and adapted to use local ingredients there by slaves taken from Africa - possibly even Angola - by the Portuguese.

In common with many other Angolan recipes, this uses palm oil, and quite a lot of it. Concerns are being raised by many environmental groups about the way in which large areas of natural forest are being destroyed in many parts of the world in order to produce palm oil. Additionally, it is not always easy to obtain in some countries, or may be labelled incorrectly, and the amount of oil used is quite high compared to western cooking styles, so we have adapted this recipe to "westernise" it, using less oil and oil from alternative sources.

Serve with plain boiled rice.

Shopping List
Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you!

  • 2 tins white beans (e.g. cannellini beans, butter beans, black-eyed beans, or a combination)
  • 2 tablespoons peanut or olive oil
  • 1½lbs chicken pieces - drumsticks, thighs, etc
  • 12oz chouriço sausage, sliced - Spanish chorizo is a good alternative
  • 3-4 cloves garlic, crushed
  • 1 tin chopped tomatoes
  • 1 onion, chopped
  • 3 carrots, peeled and sliced
  • 1 small cabbage, shredded
  • 2 bay leaves
  • 2 hot red chillies, finely chopped (more if you like it fiery!)
  • 3-4 tablespons chopped fresh parsley
  • Salt & black peppe to taste
What To Do
BulletpointIn a large saucepan or wok, heat the oil.
BulletpointFry the onion, chillies and garlic for 5 minutes.
BulletpointAdd the chicken pieces and fry until browned all over. Add the sliced sausage and fry for a further 5 minutes.
BulletpointAdd the cabbage, bay leaves and carrots and fry for a further 5 minutes. Add a little water if necessary.
BulletpointAdd the tomatoes, beans and parsley. Season to taste.
BulletpointBring to the boil, then reduce the heat and simmer for 30 minutes or until all the ingredients are cooked thoroughly.
