New York Cheesecake

What's the big idea?
OK, this does take a little work and effort, but if you want a great finale to a USA themed party, this New York deli-style cheesecake should be perfect.

Shopping List
Here's the list of what you need, and if you click the link on the right, the nice people at Tesco will deliver it for you!

  • 4½oz plus 3 tablespoons plain flour
  • 8oz caster sugar
  • 2½ teaspoons grated lemon zest
  • ½ teaspoon vanilla extract
  • 4oz unsalted butter, softened
  • 2½lbs cream cheese
  • 1½ teaspoons grated orange zest
  • 5 whole eggs plus 3 egg yolks
  • 4oz double cream

What To Do
BulletpointIn a bowl, combine 4½oz of plain flour with 1oz of the sugar, 1 teaspoon of the lemon zest, and ¼ teaspoon of the vanilla extract.
BulletpointForm a well in the center and add 1 egg yolk and all of the butter. Work with a fork to make a dough.
BulletpointAdd up to 2 tablespoons of water, if necessary, to make a pliable dough.
BulletpointForm into a ball, wrap in clingfilm and refrigerate for 1 hour.
BulletpointMeanwhile, preheat the oven to 400F/200C. Butter the sides and bottom of a 9-inch springform cake tin.
BulletpointIn a large bowl, combine the cream cheese, the reamaining 7oz sugar, the extra 3 tablespoons of flour, 1½ teaspoons lemon zest, and all of the orange zest.
BulletpointBeat well.
BulletpointAdd the 5 whole eggs and 2 remaining egg yolks (one at a time, mixing as you add each).
BulletpointAdd the double cream and the remaining ¼ teaspoon of the vanilla extract and beat well again.
BulletpointRoll out roughly one-third of the chilled dough on a floured surface; roll it out in pieces and evenly press them into the bottom of the prepared cake tin.
BulletpointBake until golden, about 15 minutes, and cool in the tin on a wire rack. Increase the oven temperature to 550F/285C.
BulletpointRoll out the remaining dough in pieces and shape them to fit the sides of the tin. Make sure that there are no holes in the crust.
BulletpointPour the cream cheese mixture into the crust.
BulletpointBake for 12-15 minutes. Reduce the heat to 200F/100C and continue baking for 1 hour.
BulletpointTurn off the heat and keep the oven door open wide. Let the cake cool in the oven for 30 minutes.
